Kimberly Ceus

Kimberly “Kimmy” Ceus is a doctoral student in Nutritional Sciences at the University of Arizona. Her research focuses on plant-based nutrition, functional foods, and movement-based interventions to improve quality of life in individuals with chronic illnesses, particularly chronic kidney disease. Originally from New York, Kimmy’s academic path reflects a commitment to health equity and culturally responsive, community-centered care. She brings prior experience in clinical trials and nutrition-focused hospitals, which shaped her dedication to developing sustainable, evidence-based therapies for underserved populations. A lifelong plant-based eater and vegan for the past eight years, she enjoys creating original recipes that integrate wellness with culture. Outside of her research, Kimmy is an avid music enthusiast, enjoys the outdoors, and seeks out opportunities to merge creativity with science. She is also passionate about mentoring future nutrition scholars and translating research into practical solutions that address disparities in access, outcomes, and long-term health resilience.
